Ingredientes para 4-5 pessoas<\/strong>
\n\u2022 Espaguete 500 g
\n\u2022 guanciale 200 g
\n\u2022 pecorino romano ralado 70 g
\n\u2022 2 ovos inteiros
\n\u2022 4 gemas
\n\u2022 azeite extravirgem de oliva
\n\u2022 sal
\n\u2022 pimenta do reino<\/p>\n

Modo de preparo<\/strong>
\nPrimeiro corte o guanciale em cubinhos.
\nMisture os ovos e as gemas com queijo pecorino ralado usando um fouet (batedor) para que as gemas se tornem cremosas. Coloque sal e pimenta do reino.
\nColoque uma panela de \u00e1gua abundante no fogo e leve a ferver. Enquanto isso, cozinhe o guanciale em uma panela com 1 colher de sopa de azeite, em fogo baixo at\u00e9 ficar crocante (cerca de 7-8 ‘).
\nCozinhe a massa conforme o tempo de cozimento para que fique al dente, que deve estar pronto com o guanciale para que possa ser temperado imediatamente.
\nEscorra o macarr\u00e3o sem secar demais (conserve um pouco da \u00e1gua de cozimento) e coloque-o de volta na panela. Tempere com o guanciale e a gordura, misturando bem.
\nDespeje os ovos batidos nos espaguetes e misture bem sem deixar que crie co\u00e1gulos. Sirva imediatamente finalizando, se quiser, com mais queijo pecorino e pimenta do reino a gosto.<\/p>\n
